Prepare the potatoes in the oven or air fryer.
Fry 2 champignons in the pan.
Chop the remaining vegetables and arrange them in a bowl.
Add the prepared potatoes and crumble feta over the bowl.
Drizzle lemon juice over the bowl and optionally add parsley or other herbs.
Cut the potatoes into wedges or fries.
Add 1 tbsp salt and the baking soda to 1 liter boiling water.
Boil the potatoes for 10 minutes, then drain.
Add spices and oil to the potatoes and mix well.
Bake for another 20 minutes at 175°C in the oven or air fryer.
Serve with fresh parsley as desired.
Mix all dip ingredients together and serve with the potatoes.
